Walnut and Banana is another excellent combination of flavours - and nutrition.
Walnut and Banana Loaf
- 75g butter or margarine
- 1 large free-range egg
- 110g caster sugar
- Grated rind of 1 small orange and 1 small lemon
- 4 medium bananas, peeled
- 50g walnuts, chopped
- 225g plain flour
- 10ml baking powder
Put sugar, butter and beaten egg into a bowl. Sift in flour and baking powder. Slice the bananas into another bowl and mash them with a fork. Whisk the first mixture thoroughly then add the rinds, banana and walnuts. Whisk again and spoon the mixure into a lined and greased loaf tin.
Bake for 50-55 minutes at 180�C (350�F) until risen and springy.
