Walnut and Chocolate...difficult to resist.
Walnut and Chocolate Pudding
- 25g butter or margarine, melted
- 45g cocoa powder
- 50g caster sugar
- 75g dark brown sugar
- Grated rind of 1 small orange and 1 small lemon
- 2 free-range eggs
- 25g walnuts, chopped finely
- 50g fine semolina
- 5ml baking powder
- 1ml vanilla essence
- 3ml cinnamon
- 275ml hand-hot water
Sift 25g of the cocoa with caster sugar, cinnamon, semolina and baking powder. In another bowl whisk together butter, eggs and vanilla then stir the mixture into the dry ingredients. Add the walnuts and pour into a deep, buttered 1 litre baking dish.
Mix together the rest of the cocoa with the brown sugar and gradually whisk in the water with a fork. Pour all over the pudding
Bake for 30 minutes at 180�C (350�F) until risen and firm.
