Here are just three of the many ways in which Walnuts and Dates work well together in cakes.
Simple Walnut and Date Loaf
Ingredients
- 150g butter or margarine
- 3 free-range eggs
- 150g raw brown sugar
- Juice and grated rind of 1 small orange
- 150g dates, stoned and chopped
- 75g walnuts, chopped
- 300g self-raising wholemeal flour
Method
Cream sugar and butter together then gradually beat in the eggs. Fold in the orange rind, dates, flour and 50g of the walnuts. Stir in the orange juice and and spoon the mixure into a lined and greased loaf tin. Smooth the surface and sprinkle on the remaining 25g of walnuts.
Bake for around an hour at 170�C (325�F) until risen and golden.
Walnut, Apple and Date Loaf
Ingredients
- 110g butter or margarine
- 2 free-range eggs
- 175g raw brown sugar
- 1 small cooking apple, peeled, cored an chopped
- 75g dates, stoned and chopped
- 110g walnuts, chopped
- 110g wholemeal flour
- 110g plain flour
- 1-2 teaspoons baking powder
- 3-4 tablespoons milk
- Pinch of salt
Method
Whisk together the sifted flour, baking powder, eggs, sugar, margarine and salt. When well-mixed addthe apple walnuts and dates. Stir well then add the milk, mix thoroughly and turn into a well-greased loaf tin.
Bake for around an hour at 180�C (350�F) until springy. A skewer pushed through the middle should come out clean.
Spicy Walnut Cake
Ingredients
- 115g unsalted butter or margarine
- 2 free-range eggs
- 175ml buttermilk
- 175g soft brown sugar
- 50g dates, stoned and chopped
- 25g walnuts, chopped
- 175g self-raising wholemeal flour
- 5ml mixed spices or allspice
- 2.5ml nutmeg
- 5ml bicaronate of soda
- Pinch of salt
Method
Cream sugar and butter together then gradually beat in the eggs. Sift together the flour, bicarb, spices and salt. Blend with the buttermilk and gradually fold into the first mixture. Fially stir in the walnut and dates and spoon the mixure into a greased and floured spring-form cake tin. Level and smooth the surface.
Bake for 50 minutes at 180�C (350�F) until a skewer comes out clean.
You can add a topping to the cake - orange is a highly complementary flavour.
